Salmon Croquettes
When fresh meat was scarce, especially during the cold winter months, canned salmon came to the rescue in the shape of croquettes. Pink Salmon came in a can so we didn't have to worry about freezing or refrigerating it. Seemed like its shelf life was forever. It was a cheap way to feed our large family during the winter months when everything was tight. When spring came we catch our own fish.

Mama bought canned pink salmon, canned mackerel, and sardines. The mackerel she cooked with fried onions and simmered the mixture. We ate it served over rice. The sardines we ate with saltine crackers.

Salmon croquettes, patties, or cakes are easy to make. It’s just canned salmon, bread crumbs (or flour and cornmeal), chopped onion, and eggs to hold it together. The mixture is shaped into patties and fried in a hot skillet. The recipe is simple but can be dressed up with garlic, dill, bell pepper, parsley, green onions or sweet paprika. You can also add Old Bay seasoning, lemon zest, Worcestershire sauce, or cilantro.
